PARIS: Maido, a Japanese-Peruvian fusion restaurant based in Lima, Peru, has claimed the top spot on the 2025 World’s 50 Best Restaurants list, solidifying its place as a global culinary powerhouse. Founded 16 years ago by chef Mitsuharu “Micha” Tsumura, the sleek eatery is celebrated for its innovative blend of Nikkei flavors and techniques.
Excited diners in Lima erupted in celebration as news of Maido’s win spread. “The fusion of flavors at Maido is spectacular,” said one local diner, echoing the international acclaim the restaurant has steadily built over the years.
Spain’s Asador Etxebarri, known for its mastery of Basque wood-fire cooking, secured second place, while Mexico City’s Quintonil rounded out the top three. The trio represents a strong showing from Latin America and Europe in the global culinary scene.
The annual ranking, organized by UK media group William Reed, is based on votes from a panel of chefs, food critics, and restaurateurs. Though often praised for its trendsetting choices, the list has drawn criticism—particularly from French chefs—for its opaque voting process and perceived bias.
Still, it remains a major milestone for chefs and restaurants worldwide. In a related accolade, Maxime Frédéric, pastry chef at Paris’s Cheval Blanc and Plénitude, was named Best Pastry Chef of 2025.
Despite the criticism, the 50 Best list continues to shape the global conversation around fine dining, often outpacing more traditional guides like Michelin in spotlighting culinary innovation.
